Growing up in Western North Dakota, I ate a lot of meat and potatoes. My grandpa raised beef cattle and my dad grew potatoes. It is a good thing potatoes can be prepared in a variety of ways or I might have gotten tired of them. As it is, I still really like potatoes and enjoy cooking with them as well.
There are over 4,000 different varieties of potatoes. Some of the more common ways they are prepared and eaten in this country include:
- mashed
- augratin
- twice-baked
- French fries
- instant
- scalloped
- baked
- hash browns
Here are three of my favorite potato recipes:
Crockpot Potato Casserole
- 2 lb. bag Southern Style frozen hash browns
- 10 oz. can cheddar cheese soup
- 12 oz. can evaporated milk
- 2 T. butter, melted
- 1/2 t. salt
Place potatoes in the crockpot. Combine the soup, milk, butter, and salt. Mix the ingredients and pour them over the potatoes. Stir to mix. Cover and cook on:
- Low 6-7 hours (only the low setting is recommended for this recipe)
Scalloped Potatoes
- 8 medium potatoes
- 4 T. butter
- 4 T. flour
- 1 t. salt
- 1 t. pepper
- 3 cups milk
- 1/4 cup chopped onion
Peel the potatoes then thinly slice them. Place in a 2 qt. casserole dish that has been sprayed with cooking spray and set aside. In a saucepan, melt the butter then blend in flour, salt and pepper. Cook over low heat while stirring. When it begins to bubble, stir in the milk and continue to stir until it boils. Add this mixture to the potatoes.
- Cover and cook at 350 for 30 minutes then uncover and bake for another 60 minutes
Another of my favorite types of potatoes is the sweet potato. Butter, marshmallows and brown sugar are all ingredients I like to eat with sweet potatoes. Below is another favorite potato recipe of mine that is cooked in the crockpot.
Apple Cinnamon Sweet Potatoes
- 3 lbs. sweet potatoes, peeled and cut into 3/4 inch pieces
- 1/2 c. packed brown sugar
- 1/2 c. apple juice
- 1/4 c. butter, cut into small pieces
- 1 t. ground cinnamon
- 1 t. vanilla
- 1/3 c. chopped walnuts, toasted
Combine sweet potatoes, brown sugar, apple juice, butter, cinnamon and vanilla. Place combined ingredients in a crockpot and cook on:
- Low - 5-6 hours
- High - 2-3 hours
Stir in walnuts before serving
These potato recipes make a great addition to many types of main dishes.
